Lemon Protein Balls

Lemon Protein Balls






Ingredients


1 3/4 cups oats

3/4 cup unsweetened coconut 

3/4 cup natural peanut butter or nut butter of choice

1/2 cup raw honey

2 TBSP flaxseeds

1 TBSP chia seeds

Zest of one lemon

Juice of one lemon

1/3 heaping cup dark chocolate chips




Instructions


Combine all ingredients and depending on the size of your lemon you may need to add a few more TBSPs of oats at the end.  I usually add about 4 additional TBSPs because I go for larger lemons.  When ingredients pull away from the side of the bowl they are ready to roll.


Form into balls and place in the refrigerator for 4-5 hours or overnight.  The more they set the better they taste.  Stores well in air tight glass jar for over a week.





The why . . .


Adding lemon zest and juice to your protein balls offers not only a sweet and delicious taste, but gives you beneficial vitamin C.  Lemons contain rutin which helps strengthen veins and prevent fluid retention, especially in the legs. Rutin has been linked to other health benefits and is a potent antioxidant.  Some studies suggest that is also has anti-inflammatory effects.  Lemons have also been known to help protect us from certain forms of cancer.
