Chocolate Zucchini Cake

Ingredients

1/2 cup margarine
1/2 cup oil
1 2/3 cup sugar
2 eggs
1 tsp. vanilla
2 1/2 cups flour
1/4 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
1/2 cup buttermilk
2 cups shredded zucchini
1/2 bag chocolate chips


Beat margarine, oil, and sugar until fluffy. 
Add eggs and vanilla; mix until well blended. 
Add flour, cocoa, baking soda, and salt. 
Then add buttermilk and zucchini.
Pour batter into 9x13 greased baking pan and sprinkle top with chocolate chips. 
Bake for around 40-45 minutes (watch at end). 
The zucchini makes this cake VERY moist and dense and it will just melt in your mouth.

Entertaining



Last night I decided to give the Instant Pot the night off and made Italian Sausage Lasagna.
See recipe below.  This is a recipe I have made for years, but recently adapted it
by adding the Italian Sausage.

This morning I washed all the linens because I like to keep our table set.
I have loved how these Sugar Paper cloth napkins wash up time and time again.


I use detergent and softener that are free from fragrance, 
but Lydia Elise Millen has been chatting up how her laundry always smells so good.  

I went in search for a U.S. comparable and I love this!  
It adds just a hint of citrus and makes your washer smell fresh and clean.  
They are dry flakes and you don't need a lot.




Italian Sausage Lasagna

Ingredients:

Italian Sausage
Lasagne Noodles (uncooked)
Cheese (I use two different kinds, but not necessary)
Sauce (I use this one and recommend it for this recipe) 3 jars
Cottage Cheese

Bake Time:

Large casserole 1 hour at 350 degrees

Directions:

Sauce (incorporate sausage into sauce)
(first layer is sauce and then follow below)

Noodles (uncooked)
Sauce
Cheese
Cottage Cheese
Repeat 5 times

(note: last layer forego the cottage cheese)

When I pull it out of the oven I add more cheese and let sit 10 minutes.  
It's so good!

Sweet Potato Casserole



I stumbled across this recipe from Lauren McBride found here.

Everyone just raves about it so, of course, I'm adding it to our Thanksgiving menu.

Madeleine Family Recipe



Bedtime Chocolate Chip Cookies

1 cup shortening (I use a butter Crisco stick)
1 cup brown sugar
2 eggs
1 teaspoon vanilla

cream together first four ingredients

then add

1/3 buttermilk (I add 1 tsp white vinegar to my skim milk)
1 teaspoon baking soda
1 teaspoon salt
3 cups flour (I add a touch more because I don't like greasy cookies)
1 package chocolate chip cookies (I prefer Semi Sweet or Dark)

form into balls and bake at 350 degrees for around 10-12 minutes
makes 3 dozen

Then just add milk and enjoy!
